Estate Chef Neil Corsten

Chef Neil Corsten brings 15 years of Michelin-starred Chef experience to our culinary program. Inspired by the authenticity of the ranch, he enjoys the hyper-seasonality of cooking, with a plant forward approach; Keeping everything on the plate and along courses in context. He loves the spontaneity of what comes out of the garden each day, and letting the quality of the product carry the dish. Sourcing much of his ingredients from the soil at Beltane, his options now include regeneratively farmed produce, heirloom stone fruit, organic olive oil, honey, herbs, wild foraged items and free range farm eggs; which accompany artisanal and farmstead meats, cheeses and fish from the relationships he has curated during his career.

RATE TERMS AND CONDITIONS

Estate Chef’s Culinary Experience Inclusive Rate varies by day and includes a multitude of experiences that make the best of the ranch’s commitment to regenerative farming and true farm to table cuisine including ranch grown organically farmed olive oil, honey, eggs, fruit, vegetables, herbs and our certified sustainable, regeneratively farmed, award-winning estate wines.

CHEF’S CULINARY EXPERIENCE PER DAY:
• THURSDAY NIGHT stay: Chef’s Al Fresco Dinner for each guest on the reservation, 6pm Thursday evening. Service included.
• FRIDAY NIGHT stay: Chef’s Al Fresco Dinner for each guest on the reservation, 6pm Friday evening. Service included.
• SATURDAY NIGHT stay: Chef’s Al Fresco Dinner for each guest on the reservation, 6pm Saturday evening. Service included.
• SUNDAY NIGHT stay: Chef’s Provisions Meal Board for afternoon or evening for each guest on the reservation. Service included.
• MONDAY NIGHT stay: Chef’s Provisions Meal Board for afternoon or evening for each guest on the reservation. Service included.
• TUESDAY NIGHT stay: Chef’s Farmstead Cheese and Charcuterie Board for afternoon or evening for each guest on the reservation. Service included.

CHECK-IN AND CHECK-OUT
• Check-in time is 3pm or later. Please let us know if you will arrive after 6pm.
• Check-out time is 11am.
• Early check-in and late check-out may be accommodated by prior request to stay@beltaneranch.com.

CULINARY EXPERIENCE AVAILABILITY

• Your stay is considered from check-in to check-out and the associated experiences are for the times within that period only.
• If you are not available for the experience at the given time, we may be able to extend the credit toward something else but only with prior approval. No shows or late arrivals may not be able to be accommodated. Discounts or partial refunds are not available.
• The location of meal service is at the discretion of Beltane Ranch.

DEPOSIT POLICY
First Night Deposit will be taken in full at time of booking and is non-refundable.

CHANGES TO RESERVATIONS
If you need to change your reservation, you may do so up until two weeks prior to arrival when the reservation becomes non-changeable. Any balance due will be charged on day of check-in. Early departures or no shows are subject to payment for reservation in full.

ADDITIONAL GUESTS
Please add all additional guests to reservation. If not added, please advise us ahead of time at stay@beltaneranch.com of all guests on reservation so the rooms and kitchen may be prepared.

DIETARY RESTRICTIONS
Please advise us at booking of any dietary restrictions.

CHILDREN
Children are welcome at Beltane Ranch but children under 6 are not allowed in upstairs rooms. Exceptions made for infants.

SAFETY
Beltane Ranch includes working farm lands and wild open spaces that come with inherent risks including uneven ground, sharp objects, livestock, wild animals, insects, chemicals, manure, tools, equipment, vehicles, and those not listed. Stay out of all animal enclosures. Stay back from horns, hooves and teeth. Children must be supervised at all time. Beltane Ranch does not take responsibility for injury or loss. By reserving a stay you are agreeing to abide by the terms and conditions.

DAMAGE
You may be charged for any damage to or removal of Beltane Ranch property.

RULES
• No smoking indoors or near dry grass areas.
• Pets are not allowed at Beltane Ranch
